Wellness: Paleo Pancake Recipe

I have been doing a lot of experimenting since going refined-sugar, gluten and dairy free. This is one of my latest creations. It is very simple but VERY delicious. Enjoy!

Paleo Pancakes
makes 3 small pancakes

2 large eggs
1 banana
1/8 teaspoon baking powder

Mash banana in a bowl until large lumps are gone and smooth. 
Add in eggs and baking powder and mix in well, until you have an eggy-looking mixture. Pour amounts onto a hot pan and cook until the bottoms look browned and golden. Flip the pancakes and cook until other side is nice and browned. 
Done! To serve, I scattered raspberries on top and drizzled with rice malt syrup. Use whatever paleo friendly toppings you desire.
